Sounds a little intimidating, but they are so easy to make! All you need is a gallon size ziploc to pipe!
Ingredients
- 4 eggs, separated
- 2/3 cup white sugar
- ¾ cup PLUS 2 Tablespoons all-purpose flour
- 1/2 teaspoon baking powder
Directions
- Prehead over to 400 degrees F. Line two cookie sheets with parchment paper.
- After seperating eggs, place whites in a large boal and beat on high until soft peaks form. Slowly add 2 tablespoons of sugar and continue to beat until stiff peaks form.
- In a seperate bowl, beat yolks and remaining sugar until pale in color.
- Finally, in a third bowl sift flour and baking powder together. Fold half of whites into egg yolk mixture, mix gently. Then fold in flour and add remaining egg whites. Do not overmix – fold gently!
- Fill batter into a gallon size ziploc, squeeze out air and seal. Cut a small tip of corner off until mixture comes out easily. Pipe onto prepared sheets and bake 8-9 minutes. Cool cookies on wire rack and use immediately.
