Tiramisu

Ingredients

  • 6 egg yolks
  • 1 1/4 cup white sugar, reserve 1/2 cup to mix with whipping cream
  • 2/3 cup whole milk
  • 1 1/2 cups heavy cream
  • 1 teaspoon vanilla extract
  • 2 tubs mascarpone cheese
  • 1 cup strong brewed coffee, room temperature
  • 2 tablespoons spiced rum
  • 2 tablespoons kahlua
  • 1 batch of homemade lady fingers OR 3 (3 ounce) packages ladyfinger cookies (see lady finger’s recipe)
  • 1 bar shaved lindt milk chocolate

Directions

  1. In a medium saucepan, whisk together egg yolks and 3/4 cup of sugar until well blended. Whisk in milk and cook over medium heat, stirring constantly, until mixture starts to boil. Continue to boil gently until thickened, remove from heat and allow to cool slightly. Cover tightly and chill in refrigerator 1 hour.
  2. In a medium bowl, beat cream with remaining 1/2 cup sugar and vanilla until stiff peaks form. In a seperate bowl, whisk mascarpone into yolk mixture until smooth. Gently fold in whipping cream and add 2 Tablespoons of coffee to mixture.
  3. In a small bowl, combine the kahlua with coffee and rum. Soak ladyfingers in coffee mixture 2-3 seconds. *If using homemade or fresh cookies, only soak for 1 to 2 seconds or they will be very soggy.
  4. Arrange half of soaked ladyfingers in bottom of a 9×13 inch dish. Spread half of mascarpone mixture over ladyfingers. Repeat layers (ending with mascarpone) and sprinkle with chocolate. Cover and refrigerate 4 to 6 hours, until set.

    @DONNA Forgot to add that… In step #3, combine the kahlua with coffee and rum.
