Pumpkin Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1 cup pumpkin puree (fresh is best)
  • 1 egg
  • 2 tablespoons melted butter

Directions

  1. In a large bowl, mix together the buttermilk, pumpkin, egg and butter.
  2. In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, nutmeg, cloves, cinnamon, ginger and salt.
  3. Stir into the pumpkin mixture just enough to combine.
  4. Pour pancakes onto a greased hot griddle over medium high heat.
  5. Cook until bubbles start to form, about 2 minutes and flip pancakes and cook for an additional 1 minute.
  6. Serve with butter and warm maple syrup.
