Ingredients
- 2 cups all-purpose flour
- 3 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 1/2 cups buttermilk
- 1 cup pumpkin puree (fresh is best)
- 1 egg
- 2 tablespoons melted butter
Directions
- In a large bowl, mix together the buttermilk, pumpkin, egg and butter.
- In a separate bowl, combine the flour, brown sugar, baking powder, baking soda, nutmeg, cloves, cinnamon, ginger and salt.
- Stir into the pumpkin mixture just enough to combine.
- Pour pancakes onto a greased hot griddle over medium high heat.
- Cook until bubbles start to form, about 2 minutes and flip pancakes and cook for an additional 1 minute.
- Serve with butter and warm maple syrup.
