Peanut Butter Cookies

Ingredients

  • 2 1/2 cup flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, room temperature
  • 1 cup peanut butter, room temperature
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 egg
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 375 degrees.
  2. Mix butter and peanut butter together until smooth.
  3. Add sugar and brown sugar and beat until creamy.
  4. Add eggs and vanilla and blend well.
  5. In a separate bowl, mix flour, baking soda and salt together.
  6. Slowly add dry mixture and mix until combined. Do not over beat.
  7. Line 2 baking sheets with parchment paper.
  8. Scoop the dough, 2 tablespoons at a time and roll into balls.
  9. Place the balls on prepared baking sheets and press each ball twice with a fork to make a crisscross design. Dip fork  in cold water to keep from sticking to dough.
  10. Bake until golden, approximately 8-10 minutes. I like mine soft and underbake them slightly. :)
