Ingredients
- 8 Yukon Gold potatoes, peeled and diced into 1 inch cubes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 4 tablespoons butter
- 1/4 cup sour cream
- 1/3 cup grated parmesan cheese
- 1/4 milk
Directions
- Add diced potatoes to salted cold water and bring to a boil.
- When tender (approximately 15-20 minutes) drain and return to bowl.
- Add butter, cheese and milk immediately and mash quickly.
- When combined, stir in sour cream and salt and pepper to taste.
- For a creamier consistency, use an electric mixer in place of the potato masher (be careful not to overmix or you will end up with gluey potatoes).
