Parmesan Mashed Potatoes

Ingredients

  • 8 Yukon Gold potatoes, peeled and diced into 1 inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoons butter
  • 1/4 cup sour cream
  • 1/3 cup grated parmesan cheese
  • 1/4 milk

Directions

  1. Add diced potatoes to salted cold water and bring to a boil.
  2. When tender (approximately 15-20 minutes) drain and return to bowl.
  3. Add butter, cheese and milk immediately and mash quickly.
  4. When combined, stir in sour cream and salt and pepper to taste.
  5. For a creamier consistency, use an electric mixer in place of the potato masher (be careful not to overmix or you will end up with gluey potatoes).
