Parmesan Chicken

Ingredients

  • 8 thinly sliced chicken breast, salt and peppered
  • 1 cup freshly shredded or grated parmesan cheese
  • 1 whole eggs plus 1 egg white, slightly beaten
  • 1 cup of panko (Japanese style breadcrumbs)
  • Olive Oil

Directions

  1. Preheat a large nonstick skillet over medium high heat and cover bottom with olive oil.
  2. Put the following in separate small bowls; cheese, egg and panko.
  3. Dip seasoned chicken in cheese, then egg, then panko.
  4. Add to hot skillet and cook until golden brown and crispy, about 4 -6 minutes on each side.
