Ingredients
- 8 thinly sliced chicken breast, salt and peppered
- 1 cup freshly shredded or grated parmesan cheese
- 1 whole eggs plus 1 egg white, slightly beaten
- 1 cup of panko (Japanese style breadcrumbs)
- Olive Oil
Directions
- Preheat a large nonstick skillet over medium high heat and cover bottom with olive oil.
- Put the following in separate small bowls; cheese, egg and panko.
- Dip seasoned chicken in cheese, then egg, then panko.
- Add to hot skillet and cook until golden brown and crispy, about 4 -6 minutes on each side.
