Ingredients
- 4 white fish fillets (halibut, mahi-mahi or cod) sprinkled with salt and pepper
- 1 fresh large lime
- ½ cup of fresh cilantro, finely chopped
- 1 mango, diced
- 2 tomatoes, diced
- 2 avocados, diced
- ½ red onion, diced
- 1 head of iceberg or romaine lettuce
- Salt and pepper to taste
Directions
- In a large bowl, mix mango, tomatoes, onion and avocadoes and juice from lime – set aside.
- In a lightly oiled skillet, cook fish until lightly seared about 3 or 4 minutes and flip.
- Continue to cook until fish is firm to the touch and flaky, another few minutes.
- While fish is still hot, chop into 1 inch cubes and mix into the rest of the ingredients.
- Spoon into lettuce leaves and serve.
