Lettuce Wraps with White Fish

Ingredients

  • 4 white fish fillets (halibut, mahi-mahi or cod) sprinkled with salt and pepper
  • 1 fresh large lime
  • ½ cup of fresh cilantro, finely chopped
  • 1 mango, diced
  • 2 tomatoes, diced
  • 2 avocados, diced
  • ½ red onion, diced
  • 1 head of iceberg or romaine lettuce
  • Salt and pepper to taste

Directions

  1. In a large bowl, mix mango, tomatoes, onion and avocadoes and juice from lime – set aside.
  2. In a lightly oiled skillet, cook fish until lightly seared about 3 or 4 minutes and flip.
  3. Continue to cook until fish is firm to the touch and flaky, another few minutes.
  4. While fish is still hot, chop into 1 inch cubes and mix into the rest of the ingredients.
  5. Spoon into lettuce leaves and serve.
