Coconut Rice

Ingredients

  • 1 1/2 cups canned unsweetened coconut milk, stirred
  • 1/2 cup water
  • 1 cup long-grain white rice

Directions

  1. In a medium saucepan bring coconut milk, water, and salt to a boil – stir in rice.
  2. Reduce heat to low and simmer rice, covered until liquid is almost all absorbed, about 15 minutes.
  3. Remove from heat and let rice stand, covered, 5 minutes.
  4. Garnish with sweetened flaked coconut (toasted) black sesame seeds, green onion
