Adding custom fields is not a feature of this theme w/Option Tree. You would need a Custom Fields plugin, which goes outside of our theme.

Hi. I cannot see an option for extending the theme with optiontree in aid theme. For example to add more custom fields. etc.

You don't need to upload the XML files with the latest version of the theme/OptionTree. It's built into the theme. You just need to install and activate OptionTree. After that, the option panel will be available under the "appearance" menu.

I'm sort of an intermediate when it comes to WP knowledge, but I am having problems understanding how to upload the XML files on the Option Tree plugin. I am using 1.1.7.1 of Option Tree which looks a lot different than the one in the video and I can't find a place to upload the XML file. Please let me know! And excellent theme!!!
