1. Categories and timelines are basically the same thing. The difference being you can control what categories display in timeline format on the Customize page. From what I can gather, it sounds like you want two categories. One for a timeline format and another for a non-timeline format.

2. It's possible, but would require a bit of research, custom code and testing to achieve. You can submit a request for customizations like this here: http://themolitor.com/custom

I would like to know if its possible to have a post appear only in a category and not on the timeline?

I would also like to know if its possible for a single post on the timeline slider to not show a date?
