Hi there,

From the Customize page (appearance > customize), there's a "fullscreen categories" section where you can select which categories display fullscreen via checkbox options.

NOTE: you need to have published posts in your categories for them to appear in the list of options.

Hi, is it possible to have multiple video gallery pages with different post categories of videos?
