Pages don't have their own individual menus. Something like that would require a customization. You can submit a request for that here: http://themolitor.com/customization-request

It shows that you can select a menu and create a menu. Can I have a page with a newly created menu? ie "Africa" has it's own page and menu structure. I've tried everything Wordpress.org and Hostgator..I'm at a brickwall

Not sure. I haven't personally experienced a limitation issue, so I haven't played around with workarounds or researched ways to override this.

Do you think if I create individual pages for each continent (Africa, N. America, etc) with their own separate menus work? I got how to create new menus just not sure how to link them to their respective pages.

This isn't a theme-related thing, but has to do with WordPress and/or hosting configurations. Nothing in the theme is restricting/controlling the menu, so unfortunately I don't have any theme-based suggestions to help you with this.

I can no longer add menu items. I have 70+ items and tried to spread out the categories as best as possible for 200 countries. Every time I add a menu item, the bottom item drops off. The going solution in WP forum is increasing the PHP max_input_vars in the ini file but didn't work and Godaddy couldn't help.
