You can remove the video link for the "Video + Reviews" template by applying the following CSS to the Custom CSS box on the Customize page...

body.page-template-page-reviews .videoLink {
    display: none;
}

The header images are applied site-wide when (1) there is no video background applied and (2) there are no featured images applied for pages like individual posts, etc.

Regarding the gallery page, that automatically displays images that have been uploaded/attached to the page. If you create a new gallery page (not necessary for your above request), you'll need to upload/re-upload images to that page.

For the Gallery, do I have to re-upload via "Upload to this post" or can I select from "Uploaded Files" for pictures already uploaded?

Is it possible to have a cycling of pictures and quotations/reviews in the bottom right WITHOUT having a video? If so, do I create a Gallery page and have to upload the pictures there and tweak that and make it the static page? OR, do I create a Video + Review page (with the respective Quote posts) and just not link a video? Do I upload the pictures then to header?

Trying to figure out when the header pictures come in, when the video is necessary for page functionality, and when Gallery comes in.
