Currently category pages display the locations on a map that are assigned to that category + the category title and description text.

That's a very good question. My categories are 'Provinces' and I'd love to be able to see map data there instead of a static, default image.

Is content 'still' the only customization available on the Category pages?

You can control the content for category pages using the description field on the category edit page.
