No security risk I'm aware of...

Yes, you can update. In my experience, the plugin is deactivated after updating, so just be sure to navigate to your plugins page and reactivate it after upgrading.

My site http://www.bergbikergastein.com just got hacked - I restored a backup and updated everything except option tree which is still version 1.1.7.1 - is there a security risk if I leave it not updated and/or is it save to update it to 2.0.8 without loosing any settings?
